Abigail Gullo, of New Orleans’ rising star restaurant Compère Lapin, took her cues from both Karina and the “women of action” in her own French and Italian family for this strong, earthy blend of Armagnac and amaro with a splash of champagne.

Combine Armagnac, amaro, syrup, and lemon juice with ice in a shaker. Shake then strain into a large coupe or flute glass. Top with Champagne and garnish with thyme or baby’s breath.
