Rene Redzepi: A Work in Progress (Phaidon, $59.95) goes way beyond the traditional cookbook format—the chef spent a year documenting his day-to-day activities in a journal, which is also included in the book along with new recipes and a flick book of images that offer a behind-the-scenes peek at the restaurant’s goings-on. For those of us who have yet to experience NOMA firsthand, the beautiful book, or rather, trio of books, makes it that much more enticing. FV
