Galactic Egg Salad

Starters from Issue 9 – Summer 2016 – The 1970s

Mork calling Orson. Come in Orson. So went the regular “call” the amiable, rainbow-suspendered alien (uproariously funny, ad-libbing whiz Robin Williams) made to his home planet Ork from Boulder, Colorado, where he’d been sent to observe our primitive society (and where he would, unwittingly, fall for Mindy). Though Mork wouldn’t eat an egg (that’s “in direct violation of the galactic convention. You can’t eat space travelers!,” he cried on one episode), the egg-shaped aircraft he arrived in is the centerpiece of a salad that’s out of this world.

  • ¾ cup buttermilk
  • ½ tsp finely grated garlic
  • cups (1¼ oz) finely grated Asiago cheese, divided
  • 1 Tbsp distilled white vinegar
  • 4 large eggs
  • 4 celery stalks, cut into ribbons with a vegetable peeler and soaked in cold water
  • ¼ cup celery leaves
  • 1 head little gem lettuce
  • 1 cup baby spinach

    Whisk together buttermilk, garlic, and ¾ cup cheese. Season with salt and pepper.

    Lower eggs into a small saucepan of simmering water, add vinegar, and cook 6 minutes. Run eggs under cold water and peel.

    Divide lettuce, spinach, celery ribbons, and leaves among four bowls and drizzle with dressing. Nest remaining cheese in the center of each and top with a soft-boiled egg.
