Gather Journal Herb Grilled QuailWhen Mr. Fox (magnificent voice work by Mr. George Clooney) moves his family above ground into a sprawling treehouse, the one problem is its proximity to the adjoining farms of horrible brothers Boggis, Bunce and Bean. The temptation proves too great for Fox. Because in this Anderson romp contentment and poultry are one and the same, we marinated a flock of quail in herbs and lemon, then grilled them to succulent perfection.

Heat a grill over medium-high heat. Pat the quail dry and arrange on a plate.
Place the herbs in a bowl. Zest the two lemons into the herbs and season generously with salt and pepper. Rub herb mixture all over quail.
Halve the lemons. Drizzle quail and lemon halves with oil.
Grill quail, turning every few minutes, until cooked through, about 10-12 minutes. Grill lemons until charred, 1 to 2 minutes.
Serve quail along with beans and greens with grilled lemon squeezed over.
