Key Lime Barley Tea

Barley is prized in Japan for its blood pressure-lowering effects. Combine it with vanilla and key limes, as Gui Jaroschy, bar director at all Rudolph’s Bar & Tea locations did, and you have a chilled drink ideal for chilling out.

  • 2 cups barley
  • 1 quart water
  • ½ vanilla bean (cut open and scraped)
  • ¼ cup turbinado sugar
  • 10 key limes

    Spread 2 cups barley on baking sheet and toast at 350°F for 30 minutes until golden brown. Bring 1 qt water to a boil and remove from heat. Steep barley and ½ vanilla bean (cut open and scraped) for 30 minutes, covered. Strain and pour into a pitcher. Add ¼ cup turbinado sugar. Stir to dissolve. Cut 10 key limes in half, squeeze into pitcher and toss in. Add ice and serve.
