Cocktails & Beverages from Issue 11 – Summer 2017 – Heroines

In Little Women, fiery Jo was the March sister we all wanted to be. She flouted gender roles and held tight to her pie-in-the-sky dreams. Since she was rarely without a quill in hand, LA Loving Cup’s Gabriella Mlynarczyk laced a lingonberry mocktail (the Marches were about temperance) with charcoal to hint at her ink-stained fingers.

for the drink
  • 1 ½ heaped teaspoons of lingonberry jam
  • 1 oz lemon
  • 1 oz honey syrup
  • oz vanilla extract
  • oz Middle Eastern water-based rosewater (plus more for spritzing)
  • 1 oz chilled berry herbal tea 

for the foam
  • 1 oz aguafaba (chickpea water from the can) or 1 egg white
  • ½ oz lemon juice
  • ½ oz honey
  • drop vanilla
  • a capsule of activated charcoal powder

    Shake drink ingredients with ice cubes the double strain into a chilled coupe glass.

    Shake the foam ingredients for 10 seconds without ice. Add 1 ice cube and whip shake for 10 seconds more to get airy foam. Spoon foam immediately on top of strained drink.

    Draw a thin line of activated charcoal powder in foam and drag into a swirl using a pick. Finish with an aromatic rosewater spritz.

    *Honey syrup: stir together equal parts clover honey and hot water until dissolved. Cool before using.
