Cocktails & Beverages from Issue 8 – Winter 2016 – Origin

Arley Marks, a consulting bartender at Dimes and co-owner of the soon-to-open Enlightenment Wines Meadery, dreamt up this drink as an expression of New York State’s biodiversity—the vodka is infused with rose hips harvested from Montauk and the sparkling mead is made from Hudson Valley honey, apples, and cherries.

  • 1 ½ oz foraged rose hip infused vodka*
  • ½ oz lemon juice
  • ¾ oz Lillet Blanc
  • 1 ½ oz Enlightenment Wines sparkling apple cherry mead (Spanish farmhouse-style Basque cider also works)
  • micro aromatics like bronze fennel blossom, shiso, or lemon balm

    Shake foraged rose hip infused vodka, lemon juice, and Lillet Blanc with ice and double strain into a Nick and Nora glass. Top with sparkling apple cherry mead (can be ordered at enlightenmentwines.com). Garnish with micro aromatics.

    *Rose Hip Infusion: Infuse 1 cup fresh rose hip flesh (all seeds removed) in a 750 ml bottle vodka (we like Material), preferably using a Vacu Vin type wine bottle pump, and let sit for a day or two until light orange in color before straining. If using dried seedless rose hips, give the process an extra day or two, shaking the mixture softly daily.
