For absinthe cocktails in New York, there really is only one suitable destination: Maison Premiere. That exquisite New Orleans-style bar’s own head bartender, Maxwell Britten, concocted the Woodland Verte, a bracingly balanced absinthe tipple, especially for us.

Add sherry, juice, absinthe and simple syrup to a tall glass. Swizzle with crushed ice then top with more crushed ice. Drizzle Amaro Abano over the top. No garnish involved.
Simple syrup: Bring equal parts water and sugar to a simmer, stirring to dissolve sugar, then cool and chill.
